Sajur Lodeh (Mixed vegetable dish with coconut)

| This is a soupy dish made with 3 or 4
different vegetables. You can use almost any vegetable, for example: cabbage, French green
beans, carrots, tauge (bean sprouts), bamboo shoots, etc. Very nice as a main or side dish
with boiled rice.

| Ingredients: 1 Pound boiled chicken breast 1 large onion 2 cloves of garlic 2 tsp sambal oelek 3 tbsp. Peanut oil 1 tsp Laos powder 2 pound mixes vegetables 1 cup coconut milk 1 cup chicken stock 2 tbsp. Ketjap manis 2 hard boiled eggs 1/4 tsp pepper 1/4 tsp salt |
Preparatio Finely slice the chicken breast and quarter the eggs. Puree the onions, garlic and sambal oelek in a blender. Add Laos powder and blend together. Heat oil in a wok and stir-fry the paste for 2 minutes. Stir in the coconut milk and chicken stock. Bring to boil. Add the mixed vegetables, simmer until all vegetables are tender. Add ketjap manis, salt and pepper, chicken and eggs. Boil for 1 minute and serve hot over white rice |
