| This is a delightful boiled eggs in tomato sauce dish for use with the rijsttafel |
| Ingredients: 8 hard boiled eggs 2 medium onions 1 tsp garlic powder 2 tsp sambal oelek 8 tbsp. Tomato sauce 1 teaspoon light brown sugar 1/2 cup diced leeks 1/4 cup vegetable oil 1/2 teaspoon salt 1/2 cup HOT water |
Preparation Dice the onions. In a food processor, make a paste out of the onions, garlic powder, sambal oelek, tomato sauce and sugar. Peel the eggs. Heat the oil in a frying pan, add the paste and continuously stir while frying. Add the eggs (keep them whole), fry them together with the mixture. Add the water and simmer for 3 minutes. Take the eggs out of the pan, cut them in halves and put them on a plate with the round sides up. Pour the sauce over the eggs and pour the leeks over the eggs. |
