Escabeche Shirred Eggs

Ingredients

  • 8 oz. thin-sliced bacon
  • 1 cup heavy cream
  • 1 cup milk
  • 5 eggs
  • 1 tsp. salt
  • Dash of Tabasco
  • 1 pod Chile Escabeche, dried & crumbled
  • 1 Tbsp. unsalted butter
  • 1/2 tsp. black pepper
  • 8 slices white bread, crusts removed
  • 1 lb. Camembert cheese
  • 12 oz. blue cheese
  • 1 Tbsp. dried rosemary, crumbled

 

Instructions

Saute 1/2" pieces of bacon until crisp, drain on paper towels and reserve. Whisk together cream, milk, eggs, salt, Tabasco and pepper in a bowl; reserve. Preheat oven to 350° F. Grease a shallow, 12" diam. pan with butter. Place a few half slices of bread in bottom of dish and sprinkle evenly with half the cheeses, bacon and rosemary. Repeat this layer, and pour the egg mixture over it to 1/2" from the top of the dish. Press down with the back of a spoon, cover and set aside 30 min. Place in oven and bake until golden on top, 30 min. Remove and let rest 10 min. before serving.
Serves 8.
